Soils are alluvial and vary from the calcium rich marl and flysch sandstone in the more hilly regions to clay, sand and gravel in the valley. My grapes are harvested at optimal maturity levels. A soft pressing was used to enhance flavour extraction while imparting minimal color from the skins.To intensify my tropical fruit characteristics, a small part of surmatured grapes is added.
